Years ago, I became smitten with these muffins sold at an in-store bakery at a high-end grocery. I'd never had anything like them. They were moist and chock full of goodness like a carrot cake, but not as sweet and in a mobile form. I moved away quite a distance from that store to the a very rural area, and eventually (once the internet was accessible) found a recipe for the muffins I so dearly adored which I tweaked to suit my preferences. These deliciously substantial muffins are filled with all kinds of goodness--pineapple, coconut, apples, carrots, pecans, and golden raisins. I love making a batch to have on hand for quick (or slowwww) morning breakfasts. They're so tasty with a hot cup of creamy coffee (don't forget the Irish cream!) and a cup of yogurt. Instructions

  1. Preheat oven to 350 degrees farenheit.
  2. Line two muffin pans with parchment cups.
  3. In a large bowl, mix eggs, oil, and vanilla until combined.
  4. Add carrots, apple, pineapple, pecans, coconut, and raisings and mix until combined.
  5. In a separate medium bowl, mix flour, sugar, cinnamon, baking soda, and salt.
  6. Add dry ingredients to wet ingredients and mix until just combined.
  7. Fill prepared muffin cups 3/4 full.
  8. Bake for 25-30 minutes, or until a cake tester or toothpick comes out clean.
  9. Cool on a baking rack.
  10. Serve warm or cooled.
